Heather's Famous Homemade Rolls

These are a FAVORITE-please-make-at-least-once-a-week tradition
1 c. really warm water
1 egg
2 T. butter
3 1/4 c. bread flour (can use all-purpose - they just aren't quite as fluffy)
1/4 c. sugar
1 tsp. salt
3 tsp. active dry yeast

Dump all ingredients in order listed (do not dissolve the yeast first *wink*) into your mixer bowl. Mix on low for 1 minute, than take it up a notch and "knead" for 3-4 minutes. Cover and leave in bowl to rise until double. (*see below) Grease jellyroll pan (I just use Pam) and shaped dough into balls (by floding into itself to make a smooth topped ball) Place on pan a little less than 2 inches apart. Let rise again (^ see below). Preheat oven to 375. Bake for about 12 minutes, or until golden brown. Rub with butter while still hot! Enjoy!!

* Can speed up rising by placing bowl in shallow sink of hot water.
^ Can speed up rising by turning oven on to 200 then turn off and place rolls into oven to rise. I have also not let them rise completely, but put them in the oven while it pre-heated to rise more - this works, but the bottoms do become a little more crunchy.
